Penne with mushrooms in white sauce

Ingredients

Number of serving: 4
1 cup penne pasta

1 packet button mushrooms

5 tsp flour

3 tsp butter

2 cups milk

1 tsp pepper powder

1 tsp sugar

3 - 4 olives

Salt as per taste

1 tsp chilli flakes

2 - 3 basil leaves for garnishing

1 tsp oil

Preparation

  • Take a cooking pot and put 3 cups water in it and let it boil. After it boils put the penne in it and 1 tsp salt and oil. Let this cook and stir occasionally so that the pasta does not stick to the bottom of the pan.
  • This will take about 10-15 mins to cook. The sign that the pasta is cooked is that it changes colour and becomes white and soft. Drain the pasta, brush it with little oil and keep aside.
  • Cut the mushroom in slices and put them in the cooking pan. Add 3-4 tsp water and a little salt and let them cook. There is no need of adding any oil.
  • The idea of putting water is to help them sweat and soon you will see the mushrooms oozing out their juices. Stop them from cooking and keep the mushrooms aside with all its brown juice.
  • The third step is to make the white sauce. For this first put the butter in your pan and add the flour to it. Keep stirring. After you notice that the flour is changing its colour, start adding the milk slowly and keep stirring. It helps if you keep stirring in one direction only.
  • Even after the entire milk is added. Keep stirring the sauce till it starts looking thick. You will notice that it starts sticking to the sides of the pan. that is when it is cooked. This should not have any lumps.
  • But if your white sauce has some lumps in it, you can simply pour it through a strainer and get a smooth sauce. Add salt, sugar, pepper in the sauce. Then add the mushrooms in the sauce and let this cook.
  • After this has mixed well. You can add the penne in it. Add the chilli flakes. Check for salt and add more pepper if you like. Cut cup a few olives and add to it.
  • Mix well and it is ready to serve. You can garnish with a few basil leaves.
