Make the caramel : in a pot on medium heat, put the sugar and some water, and leave until caramel forms. Immediately take it out of the heat and pour it into a microwavable mould.
Beat the eggs and add the coconut milk. Stir, and add the condensed milk, and mix well. Add the grated coconut and stir.
Pour this batter into the cake mould where you have poured the caramel before.
Microwave the flan for 8 minutes at 800 W. Check for doneness with a toothpick and remove from microwave.
Leave to cool down completely and unmold. And there you are !
