Whole Wheat Sweet Potato Pizza Dough

By Meals and Miles (Visit website)

This week’s BSI was a bit of a challenge for me. As big of a fan as I am of the sweet potato, I felt everything I have done in the past with it has been something I have seen before. My goal in these challenges is to always think outside the box, so I started to think… and think… and think… Until finally it came to me yesterday in the middle of my weekly meeting.

I was going to make a Sweet Potato Pizza Crust. :)

I was thinking about Sweet Potato Pancakes when the thought of adding toppings came to me which led to sweet potato pizza and then the challenge of creating a sweet potato dough. This idea got me really excited. :)

I spent some time today googling multiple pizza recipes. I took different elements from a couple recipes that enabled me to create a recipe for the dough. Thankfully my collaboration of recipes worked and I created a perfect Whole Wheat Sweet Potato Pizza Dough.

Whole Wheat Sweet Potato Pizza Dough

1 teaspoon dry yeast
¾ cups all purpose flour
1 cup whole wheat flour
1/2 sweet potato, mashed
½ teaspoon salt
3/4 cup hot water

Mix together the yeast and hot water a small bowl until yeast is dissolved. Leave this bowl in a warm place until a froth forms on the top.

Sift together the flours and salt in a large bowl. Add the mashed sweet potato to the dry mixture and blend until crumbly. When the yeast mix is ready, make a well in the center of the crumbly flour mix and pour the mixture in. Mix together and knead to make smooth dough.

Wrap this dough in a greased plastic sheet and leave in a warm place for at least an hour. Once the dough has swell to at least twice its size, you are ready to start making pizzas!

This recipe produces enough dough for a medium/ large pizza. Once the dough is ready, place it on a floured counter and use a rolling pin to spread the dough to your preferred thickness.

The crust goes into the oven at 425 degrees for 5 minutes.

As much as I was trying to stay away from the Black Bean/ Sweet Potato combination for the challenge, the more I thought about the more I realized the perfect topping for this pizza would of course be black beans. So I topped my crust with a can of Black Beans, the last of my Jalapeno Cheese, Banana Peppers, and the other half of my Sweet Potato. I put the toppings on the crust and put the pizza back in the oven for another 5 minutes.

The combination was AMAZING!!!!!!! I think this is my favorite BSI combination yet. I had 2 slices of my pizza and would be lying if I said I did not go back for another sliver (or 2). :)

I felt like I needed some veggies so I heated up a half of a cup of a frozen mixture I had in the freezer.

THANK YOU Melissa for selecting Sweet Potato as this week’s BSI!!!! I am very excited to submit this recipe for the contest!! :)

My other eats from today are not quite as exciting as my dinner. ;)

For my afternoon snack I took my time nibbling on some Oh! Nuts Brazil Nuts and some Quaker Oatmeal Squares.

Ok so maybe I lied my dessert was actually pretty fun too. :)

I was VERY excited when I just had to buy some ricotta cheese for my Lasagna on Sunday. We all know about my little obsession I had with ricotta last month so I was very happy to have it back in my life. For dessert I decided to recreate this fabulous recipe that just happened to be on my mind all day.

Ricotta Cheese, Chocolate Chips, Strawberries, & Graham crackers.. OH MY! All of my favorite things combined into one!

It was a good night for food. :) Even Abbie is relaxing in a happy food coma (she had a sliver of pizza and enjoyed it immensely). I hope everyone has a good night and I can not wait to see all of the other great BSI recipes this week!
