Margarita Monday

Everyone loves a good margarita and I am no exception. I especially crave Mexican food and a good margarita now that I am living in DC. After giving up on my quest for a good Mexican spot in the area, I decided to learn to cook my favorite Mexican foods...let's just say that I'm still learning. I have made countless rounds of queso and have yet to find a good substitute for the velveeta and rotel standby (I know! That's not queso - it's cheese dip!). Don't worry, I have not given up on finding the perfect homemade recipe and will post it as soon as I do! But back to simpler Mexican feats...the Margarita!







When I saw these blood orange beauties at the market this weekend, I knew I had to take advantage of the season and buy a few. What to make with these gorgeous round goodies? Why, of course...a margarita! Blood oranges are a little bit tarter than the average orange but oh so pretty. I love their ruby red color and they really jazz up a ho-hum margarita. If you can't find blood oranges, you can easily play around with other fruits and juices (grapefruit perhaps?). A little bit of juice also works well in place of OJ in a mimosa - my other favorite drink.







 Blood Orange Margaritas

Serves 2.

4 Blood Oranges, juiced plus 4 slives for garnish

1 cup good tequila

1/2 cup Triple Sec or Cointreau

1/4 cup fresh lime juice

ice

kosher salt or sugar for decoration



Mix all ingredients in a pitcher or cocktail shaker. Wet rim of margarita glass. Place salt OR sugar (whatever your preference) on a small plate. Place glass upside down so that salt/sugar sticks to wet rim. Garnish with a thin slice of blood orange.







This recipe would also be delicious frozen. Unfortunately, I only had enough ice to chill the drink otherwise I would have blended this to make a fancy frozen rita. If you choose to go the frozen route, pour all ingredients in a blender. Fill with ice and blend. Enjoy!
