Oatmeal Pancakes with strawberries & honey(Eggless).

Another healthy breakfast option recipe..;) often we think of how good, bad or ugly something might taste and are scared to try it or just brush even the thought aside saying oh...it's something that's not common in our culture so why try un necessarily..!!



We are all familiar with both the terms Oatmeal & Pancakes...so i decided to try Oatmeal pancakes...a healthier option to the regular pancakes which are rich and quite heavy on the stomach.



Having a very liberal hubby on such issues the poor man was my first guinea pig too for this one, and my experiment did quite well... and now my hubby needs pancakes as breakfast atleast 1 - 2times in a week...sometimes even packed for work....quite encouraging that was...;)



The good thing is that it takes just a jiffy to get one pancake off the stove...! The best part being you can make both healthy and heavy in the tummy versions very easily...with not very difficult variations...!!



Ingredients:

Oatmeal(quick cooking variety): 1 & 1/2 cup.
Whole wheat flour: 1 Cup( or All Purpose flour i.e. maida for a heavy version).
Yoghurt/ Buttermilk: 1 & 1/2 cups ( well beaten).
Sugar: 1 tsp.
Salt: 1 pinch.
Baking powder: 1 & 1/2 tsp.
Strawberries - 2 - 3 nos.
Vegetable Oil( or Butter) - 2 Tbsp.
Vanilla Essence: 1tsp.
Honey: use as required for dip.
Method:

Roast the oatmeal for a few mins in the microwave or in a dry roast pan until you get the nice aroma of roasted oats, coarse grind the oats.
Mix all dry ingredients well together.
Mix Yoghurt/Buttermilk & vanilla essence together.
Now slowly mix the dry ingredients and the wet ingredients together without forming lumps...if you feel it's convenient dump all the ingredients together in the blender and blend the batter for about a minute, check the consistency(it should not be very thin) keep the consistency same as for a normal dosa.
This mixture can be stored in an airtight container for upto 4-5 days in the regrigerator.
To make pancakes, just bour the batter on to a greased (with butter or olive oil) tawa or a flatbed pan on medium heat until one side is cooked turn the pancake  to the other side allow the second side to cook as well.
Serve with honey and strawberries(taste's yum).
Preperation time: 8 -10mins.

Serve size: Makes 7-8 pancakes (size could vary as per individual's choice).



Enjoy your Oatmeal pancakes, you could just add 2 eggs to the same recipe if you feel you'd like it better with egg..;)
