Octupussy & Seaweed
This is a lunch meal that I used to make for my children all the time when they were younger. On occasion, I would fix this for school lunches to take in to share with my children's class. It takes about an hour to prepare and only about 5 minutes to devour.I would like to dedicate this recipe to a beautiful, little girl named Amelie. We are separated by ocean and I have never had an opportunity to meet her personally. But her Papa writes a blog about his experiences raising his daughter and after awhile, you begin to feel as though you know this family personally. If you haven't paid this blog a visit, it is well worth your time. What you will need: Package of GF hot-dogs GF Fettuccine (Ramen noodles work best if not a Celiac) 1 Box of Swanson's Chicken Broth (not needed if using Ramen noodles) GF Ketchup GF Mustard If you are using Ramen noodles, just put enough water in the pot so they will cover the noodles and add the chicken flavoring packet. Bring to boil and add noodles. If you are using GF noodles, bring the box of Swanson's Chicken broth to a boil and add noodles. While your noodles are cooking, slice your hot-dogs vertically and horizontally about 2/3 way up the hot-dog. The end result should look like the picture on the right. Cook your hot-dogs until done. The tentacles should curl up resembling an Octopuss. Drain your hot-dogs and place to the side. About 10 minutes before your noodles are done cooking, add green food coloring to the water. Ramen noodles will absorb the coloring better than GF noodles do. When done cooking, pour into strainer and rinse well. Place noodle in an 11x9 glass baking dish and salt to taste. Take each hot dog and dab two dots of ketchup for eyes and one dab of mustard for the nose and place on top of the green seaweed (noodles). Your end product should look like this. Place in a preheated 350 degree oven for just 5 or 10 minutes to heat the meal. Do not leave any longer or it will dry out.
