Sweet Diamond Cuts/ Shankarpaliis a sweet crispy snacks which is very easy to make and its prepared mostly during the festival - Diwali. Mom used to prepare this every year. I used to cut the dough in diamond shapes for frying. A special kind of tool is available in the market to cut this dough in designs with a wheel at one end and a spoon on the other end. I couldn't find one for myself so I used a pizza cutter. This sweet is also called as Shakkarparein Maharashtra.
Ingredients
Maida/ All purpose flour - 3 cups
Sugar - 1 cup
Ghee - 3 tsp
Salt - 1/2 tsp
Oil for deep frying

Method
1. Powder the sugar and keep aside.
2. Mix maida, sugar, ghee and salt with enough water to make a dough. The dough should be neither too loose nor too tight. Set aside for 10 mins.
3. Knead it again and divide the dough into equal parts, slightly bigger than the lemon size. Take a portion and roll it into a thin circle with a rolling pin dusting the dough when needed.
4. Cut the flatten dough with the pizza cutter into diamond shapes. Carefully seperate them and keep them ready for deep frying.
5. Mean while heat oil for frying in a wide wok. Fry these till golden brown in a low- medium heat and place it on a tissue paper to absorb excess oil.
6. Once it gets cooled, store it in an air- tight container.
