Zucchini soft cakes with kiri cheese core

Ingredients

10 ounces zucchinis
1 cup flour
2/3 cup parmesan
2 eggs
2.5 fl ounces milk
1 Tbsp oil
3 Kiri cheeses (can be replaced by Philadelphia)
salt

Preparation

Step 1

In a bowl, mix together the flour,the parmesan, the eggs, the milk, the oil and the salt.
Step 2 - Zucchini soft cakes with Kiri cheese core

Step 2

Clean the zucchinis, then finely blend them, without peeling them.

Step 3

Add the zucchini mix to the batter.
Step 4 - Zucchini soft cakes with Kiri cheese core

Step 4

After greasing the moulds, fill them half way with the batter, then add half a Kiri cheese square, then cover with batter.
Step 5 - Zucchini soft cakes with Kiri cheese core

Step 5

Bake 25 minutes at 390°F (200°C). There you are, your zucchini soft cakes are ready !
