Reader Challenge

Ok, I know I’m a day behind..but, Gossip Girl! Oh MY God!!! Sooo good!!! :) I totally saw that coming, but was still jumping up and down on my couch when it did!


Now that I got that out of my system I can continue with my post as normal. As I had promised my dinner tonight was very interesting and very delicious! This was one of those ideas that kept evolving in my head all day. I started knowing I wanted to have fish for dinner, then I was thinking what I had in my fridge that could go with it and kept adding from there. The finished product was amazing!

I present Spinach Ricotta Tilapia

I sauteed some onion and garlic, added fresh spinach until it was wilted, then mixed in part skim ricotta to create the topping. I then seasoned the tilapia with garlic salt and pepper and put it in the oven at 420 degrees for 5 minutes. I removed the fish added the topping, then baked for 5 more minutes. It was wonderful! Sometimes evolving recipes are the best way to go.


On the side I had some Butternut Fries and toast with a little bit of smart balance.

Dessert was calling my name from the freezer tonight.

I had some Peanut Butter Cup Frozen Yogurt with Brown Puffed  Rice.


Before I left work today I had a Pumpkin Spice Kashi bar.

In other news….


As I was reading my blog statistics today I realized there are a whole bunch of readers out there that I do not know anything about. So I have decided to set up a challenge to get to know everyone and maybe have some closet readers come out of the wood work.
