- Hydrate the yeast in the warm milk.
- In a bowl, put the flour, the sugar and the salt. Dig a hole in the middle, and pour the milk and yeast, the water and add the two eggs.
- Mix until the dough is smooth.
- Keep mixing, and gradually add the softened butter. Keep mixing until the dough comes off the bowl. Leave to rest for 30 minutes at room temperature.
- Degas the dough, meaning applying some pressure on it to let the air come out. Put in the fridge for 1 hour.
- Degas again, then roll the dough out. The dough must remain flexible, so don't roll it out with too much pressure. Cut circles in it, and arrange them on a baking tray. Leave to rest for 1 hour at room temperature.
- Put the doughnuts in a pan with hot oil, and leave to cook for 4 minutes at medium heat (you can also use a fryer).
- Turn them over, and cook for 4 minutes again.
- Once the doughnuts have cooled down, you can fill them by making a hole on the side using a knife. Fill it using a piping bag or a syringe full of chocolate spread.
- There you are, your doughnuts are ready !
