  • 1 egg
  • 3.5 oz of feta cheese
  • 1/4 onion
  • 5 mint leaves
  • 1 tablespoon sesame seeds
  • 4 tablespoons breadcrumbs
  • 3 tablespoons flour
  • 1 cup of water
  • salt to taste
  • olive oil to taste

How to make vegetarian meatballs with air fryer

  • In a skillet, heat a drizzle of extra virgin olive oil and sauté the onion until it becomes transparent. Add the frozen peas and let them toast for a minute to bring out the flavor. Deglaze with a glass of water, lower the heat, and cook for 7 minutes, or until the peas are tender.
  • Transfer the peas and onion, along with some of the cooking water, to the blender jug. Add the fresh mint leaves and a grind of black pepper. Blend until creamy.
  • Pour the creamed peas into a bowl and incorporate the crumbled feta, bread crumbs, egg, sesame seeds, and season with salt. Mix all the ingredients thoroughly. When the mixture is smooth, incorporate the flour as well (1 tablespoon at a time).
  • Prepare the basket of the air fryer by lining it with baking paper and spraying it with olive oil. Using a spoon, form small patties with the mixture and gently lay them on the baking paper, leaving a space between each one.
  • Bake in air fry mode at 350°F (180°C) for about 11 minutes, until golden brown.
