Mango sticky rice, the super comforting thai dessert

Materials
- 1 saucepan with lid
- 1 frying pan
- 4 bowls
- 1 knife
- 1 cutting board
- 1 spatula/maryse/rice spoon
Preparation
Cleaning rice:
Soak rice in cold water for at least 1 hour before use. Then rinse the rice until the water becomes translucent.Cooking the rice:
Cook the rice with the cold water, covered, for 15 minutes over medium heat.
Turn off the heat and leave to stand for 10 minutes, covered.
Coconut coulis:
Pour the coconut milk into a frying pan. Add sugar.
Stir and bring to the boil. Leave for a further 2 minutes, stirring to thicken the mixture.
Pour about 3/4 of the coulis into the rice and stir in with a rice spoon.
Pour the mixture into bowls and chill for 1 hour.
Cut mango into slices.
Place the slices on top of the bowl.
Add coconut coulis and sesame seeds.

How many bowls can this mango sticky rice recipe make for 4 servings?
We made two large bowls with this recipe, but you can easily make 4 and the portions will already be very generous!
Can I adjust the texture of the rice?
You can adjust the texture of the rice by changing the amount of cooking water. If you want the rice to be "al dente", use as much water as rice. If you prefer a more melting and sticky rice, use more water than rice.
Can I make more coulis?
Yes, you can make more coulis if you wish.
What kind of rice should I use for mango sticky rice?
It's best to use Thai sticky rice. If you really can't find any, you can use sushi rice or dessert rice.

The rice in mango sticky rice is traditionnaly steamed. Here we cooked it the "simple way", in a pot. You can also use a rice cooker!
