Appam((Rice pancake) is a traditional breakfast of  kerela. Appams are soft and spongy in the centre and it is a healthy dish as oil is not much required in this recipe.

Raw Rice - 2 cupsIdly rice - 1 cupWhite urud dal - 1 cupFenugreek seeds (methi) - 2 teaspoonGrated coconut - 2 tablespoonSalt - 2 teaspoonCooking soda - 1/4 teaspoonCooked boiled rice - 1 cup (optional)Method:

 Soak raw rice, idly rice, white urud dal and fenugreek in water for 6 to 8 hours (overnight).Grind all the soaked rice, and finally add the boiled rice and grind them all to make a smooth batter consistency. It should be thinner than dosa batter.Add salt and mix well and let it ferment for 8 hours.Now add 1 tablespoon of water and cooking soda and mix it to the batter and keep it aside for 5-10 minutes.Now heat non stick Appam kadai, and apply oil in the kadai and add a ladle of batter in the centre of the kadai.Hold the kadai handles and rotate it in a way that the batter spreads all around in a circle.Cook for few minutes till the batter gets cooked in a low flame.Serve hot Appam with coconut milk/ chicken curry/ kadala cury.
