protein choco tacos of awesomeness
makes 2 servings

for the taco shell
1/2 cup old fashioned oats
1 scoop of protein powder (i used vitol 100% egg protein)
2 egg whites
1 tbsp unsweetened almond milk (you can use skim milk or water)
1/4 tsp baking soda
1/4 tsp vanilla extract

for the filling
1/2 cup frozen blueberries, thawed (or mixed berries)
1 scoop of protein powder (i used vitol 100% egg protein)
1/4 cup unsweetened almond milk (you can use skim milk)

toppings (optional)
a melted ghiardelli chocolate square (i like intense dark espresso escape)
1/2 tbsp crushed spanish peanuts
methodheat up your waffle iron and spray it with non-stick spray. grind up the oats in a food processor to make oat "flour".

add in the protein powder, egg whites, milk, baking soda, and vanilla extract.

make yer waffle!

?while your waffle is cooking, you can start on the filling. put the berries in the bowl of your mixer.

mash them.

add the rest of the filling ingredients.

turn your mixer to the highest setting and just let this run for about 10 minutes. you will see it gain tons of fluffy volume. when it looks like the pic below, it is ready.

spoon the filling onto the waffle.?
?

add on the toppings if you are using them.? fold the waffle in half length wise and cut in half.
here is the nutritional info for the filling.

and for the waffle.
