Anchovies in the oven ? ?????? ??? ??????
![]() Anchovies at Irini Unlike most Europeans or Americans the Greeks love small fish. According to the season you will find Anchovy (??????), Pilchard (????????) but also Atherine (???????) throughout Greece. Mostly they are being fried as a whole and eaten with the head and all the bones. Preparation time: 5 minutes Baking time: 20-30 minutes Very simple recipe Ingredients : 1/2 kilo of very fresh Anchovies, prepared by your fish dealer some olive oil juice of half a lemon fresh Thyme or Oregano Salt and fresh pepper Preparation: As mentioned before, let your fish dealer clean the fish. Not because it is difficult, but monotonous. In case you do want to clean the m yourself: Cur the head off, slice them open, remove all the intestines and wash the fish well. Now put them on a cooking grate that fits into your oven. (Usually there is one that fits on a pan while placed in the oven). Make sure that the fish lay all next to one another.
