Nasi goreng ikan bilis (anchovies fried rice)

This simple and tasty fried rice is great as a meal on its own.

Ingredients

Number of serving: 5
4 cups cooked white rice

2 tbsp small white anchovies - soaked in water and drained

1/2 cup frozen green peas

2 pieces shiitake mushrooms - soaked in hot water to soften and sliced thinly


10 garlic - chopped

2-3 sprigs spring onions - sliced thinly

oil as needed

salt and pepper to taste

Preparation

  • Add enough oil in a heated wok and break in eggs.

    Scramble eggs into small pieces, remove and keep aside.

    In the same wok, fry anchovies till crispy.

    Remove and keep aside.

    Add another 2-3 tbsp of oil in the wok and fry garlic for about 2-3 mins.

    Put in rice, shiitake mushrooms as well as salt and pepper to taste.

    Keep frying until all ingredients are combined in.

    Lastly add frozen peas, spring onion and the scrambled eggs.

    Give a good stir before removing from heat.
