WOW, not to toot my own horn, cause anyone can make these, BUT........................THESE WERE YUMMY!!!!!!!!!!!!!! I love smores ANYTHING!!! So, I decided to make a batch of Smores Cake Pops, and I'm proud to say, that they turned out great! I made them a little LESS wet than my other batches. I think that helped out the Smores texture. I made them to help out the Europe trip that all the teens are saving for. Below, I will post the recipe. ENJOY, as I'm sure you will:) (Just saying, it's getting that time of year to CAMP OUT "AGAIN"!!!!! YAY!!!) Smores Cake Pops (April Grantham) This will make a BIG batch! You can half it, BUT WHY? 9 x 9 vanilla cake9 x 9 chocolate cake2 c. to 3 c. of graham cracker crumbs (I jugde how much it smells and taste like a smore)marshmallow cream (you have to use your OWN judgement, but at least a 1/4 c.)vanilla icing (I added very little, wanted a MORE marshmallow taste)Almond Bark, Melting Chocolate, Etc. (Milk Chocolate) About a Poundmini marshmallows mini chocolate chipsgraham cracker crumbspopsicle sticks or sucker sticks-I thought the popsicle looked better AND they are cheaper! Bake cakes according to package directions. Cool and crumble in a big bowl. Add the graham cracker crumbs. I added a pretty good bit. You want it to taste like smores more than cake. Since it is more dry than normal, I had to add more binder. I usually add a 1/4 c. to a 9x13 cake. But this needed more. I only added about 1/8 c. of icing. And you can eliminate the icing all together. I added more than 1/4 c. of marshmallow cream. Just keep mixing it together and add accordingly. I did not want mine too moist. It is a smore cake pop. For that matter, I do not add alot to my other cake pops, either. I do not like them so mushy that they fall off the stick. They are supposed to be cake on a stick! Once mixed, add the sticks with melted chocolate. Let set a few minutes. (I DID NOT freeze my cake balls. It's more work, but my chocolate does not crack anymore.) Dip in melted chocolate, GENTLY tap off excess chocolate, carefully add decorations. These decorations are a little heavy and might slide off. Keep rolling the pop in your hand and let dry before placing in a stand. I bought a HUGE styrofoam block to sit my cake pops in. And ENJOY:) TIP: I added a SMALL amount of marshmallow cream in mixture WITHOUT stirring it up, so there would be small traces of it when you bite into the pop. But, BE careful. You can overdo it and have a messy problem on your hands. Happy Baking!!!!!!!!!!!!!!!
