Apple butter cake, cinnamon frosting, best EVER.
But it's not gross! It's amazing! It's like an apple pie full of spice that you can spread on your toast! You can definitely make your own and there are a ton of recipes online to help you but if you're in London too, you can pick up a jar at Borough market from the England Preserves stall. Their rhubarb and redcurrant is oh-so-good, but their apple butter's a definite winner. Anyway, didn't want to use the whole jar up just spreading it on toast, but I also didn't want to cook it in a cake because it's flavour isn't strong enough. Compromise! A two layer apple cake, with apple butter as the filling! Are you drooling? I used a cinnamon frosting to cover it because I'm just an apple-cinnamon lover, but you don't even have to ice it if you like it all natural, it's a pretty moist cake. You'll like it I think. Another american staple that's hard to find here is applesauce. The only kind we have is that sweet gloopy crap that they sell in jars to go with pork. I found the answer British food friends... Oh yes. Ok! Let's make it! For the cake you'll need: 1/2 cup soya margarine 1 cup sugar 2 1/2 cups plain flour 1 1/2 tsp baking soda 1/2 tsp salt 1/2 tsp each of cinnamon, ground nutmeg and mixed spice 1 tsp cider vinegar 1 cup soya milk 1/4 cup sunflower/canola oil 1 cup apple sauce/baby food. Ha. Mix the soya milk and vinegar in a big mug and put to one side to curdle. Put the margarine and sugar into a bowl and cream until smooth. Add the lumpy milk (mmm) and mix thoroughly. Then add the apple sauce, mix again, then add the oil and beat in until it's not oily at all. Then sift in the flour, baking soda, salt and spices and mix again until it's a smooth smooth batter. Line two smallish cake tins with greaseproof paper and put half the mixture into each. Bake at Gas mark 4/350F/180C for 20-25 minutes, until they're browned on top and a knife inserted comes out clean. Take them out of the oven and tip them out of the tins. Put onto a wire rack or board to cool while you make the frosting. This frosting is ee-zee. It's pretty rich though. You'll need: 1/2 cup soya margarine 2 cups icing sugar 2 tsps cinnamon a tiny bit of soya milk. Cream the soya margarine for aaages with the icing sugar. Seriously, it takes a long time. Once it's all mixed, add the cinnamon and add a tiny bit of soya milk at a time until it's smooth and thick enough to slather onto a cake. Hopefully your cakes are cool by now so put the first one onto a plate. Grab your apple butter and cover the entire top of the cake in the apple butter. Then take the other cake and carefully balance it on top. Get a palette knife and cover the cake! It's a bit tricky. I decorated it afterwards with pecans but you know, whatever floats your boat.
