*apple strudel cookies (apfelstrudelplätzchen)

Ingredients

• 6 tablespoons butter
• 2 tablespoons apple butter
• 1/2 cup dark brown sugar
• 1/2 cup sugar
• 1 egg
• 1/2 teaspoon vanilla
• 1 1/2 cups Muesli
• 3/4 cups flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 teaspoon cinnamon
• 1/4 teaspoon allspice
• 3/4 cup dried apples diced/cut small

Preparation

• Preheat oven to 350 degrees. In a bowl combine muesli, flour, baking soda, baking powder, salt, cinnamon, allspice and nutmeg. In a large bowl or in your mixer bowl beat together butter, sugar, and brown sugar. Once combined add the apple butter, then the egg and vanilla. Scrape the sides of your bowl and add the muesli and flour mixture slowly. Do not over beat, just mix it until its mostly combined. Add the apples to the mixture and scoop large spoonfuls onto a parchment lined, or silicone mat on a cookie sheet. I used a large standard sized disher scoop. Bake for 12-14 minutes.
