Apple Spice Turnovers

I can’t believe my winter break is ending soon, I really don’t want to go back. To be honest, I haven’t been giving it much thought but it’s hard not to think about it when people are already treating me like I’m leaving, asking when my last day at work is and putting in their final baking orders. Like I said in my previous post, the snow has been so intense all day so along with the Cinnamon Roll Sticky Buns I made, I decided to make some apple turnovers requested by one of my co-workers.



Apple Spice Turnovers


Flaky Pastry (I halved this recipe)


Food and Wine



5 cups all-purpose flour
1 tablespoon kosher salt
4 sticks (1 pound) unsalted butter, cut into tablespoons
3/4 cup ice water
1 large egg
1 tablespoon cider vinegar

Spiced Apples



3 small granny smith apples, cored and peeled into 1/4 inch slices
2 tablespoons unsalted butter
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons brown sugar
2 tablespoons honey
1/4 cup pumpkin butter


In a food processor, pulse the flour with the salt. Add the butter and pulse until it is the size of large peas. Transfer the mixture to a large bowl and make a well in the center
In a small bowl, lightly beat the ice water with the egg and vinegar. Add the liquid to the well and stir it into the butter-flour mixture. Using your hands, gather the dough and knead it in the bowl several times, until it is evenly moistened. Divide the pastry in half and flatten it into 2 disks. Wrap them with plastic and chill until firm
Preheat the oven to 350° F
Toss the apple slices with the cinnamon, nutmeg, brown sugar, honey, and pumpkin butter
Melt 2 tablespoons butter in a skillet over medium heat. Add the apple slices and cook for about 5 minutes or until apple slices feel tender and start to brown. Turn several times to cook evenly. Set pan aside
Roll chilled dough into 4 rectangles. Cut each rectangle in half to make squares (8 squares in total). If the pieces are not quite square, gently stretch them into shape
Add about 5-6 apple slices to each square and fold over, pressing edges with a fork to seal. Repeat for remaining turnovers and place them on sprayed baking pans
Beat egg with 2 tablespoons water. Brush the tops of the turnovers with the egg wash and sprinkle each with a bit of cinnamon
Bake for about 20 minutes or until slightly golden
