Chocolate molasses cookies: a versatile cookie delight
By now, it should not be a secret that I am a chocoholic. Then it should definitely come as no surprise that I am always looking for ways to incorporate this ingredient into anything. When I found this recipe for Chocolate-Molasses Cookies, I was pretty excited. Not only are they delicious, but they are a very versatile cookie when it comes to decorating. Because of the balanced flavors of the chocolate and the molasses, all this cookie needs is a bit of sweetness to make it more special, like confectioner's sugar. I normally just dust a little bit over the cookies, or if I want to get fancy, I go the stencil route. I found these Martha Stewart stencils the other day and I think they work great! Aren't the designs cute?! I love them. It gives the cookie a very classy whimsical touch. This cookie is pure chocolate deliciousness in every bite., and it has a chewy, almost cakey, consistensy. When they come out of the oven they will be soft so it is important to let them sit in the cookie sheet for about 5 minutes after you get them out of the oven. Then you can move to a cooling rack.
