Dates going nuts in a bar!

Two ingredients, one incredible flavor! The unprocessed, creamy cashews are rich in iron, zinc and B Vitamins. The chewy dates have more potassium than bananas. Together they form a bar rich in fiber with 2 grams of heart-healthy Omega-6 fatty acids and 15 essential vitamins and minerals. So much sustaining nourishment in such a simple recipe.

And that is why I decided to make them since they are not available in Saudi Arabia and even if they were making them is easy, fun and cheaper.

Because dates are so popular in the Orient, I will make this energy bars with other types than Medjool to try different flavors, I personally found those too sweet and couldn't finish one bar eaten on an empty belly! There are over 20 known species of date & more than a 1000 variations, each date is also available in 4 forms: kimri -unripe-..Khalal -edible and crunchy-. Rutab -ripe and soft- and Tamr - sun-dried.
 One date has nearly 23 calories and is loaded with nutrition. Dates are an excellent source of carbohydrates (great for pre- or post-workout), contain no cholesterol, are high in fiber, and boast a wide range of nutrients, including calcium (32 mg per serving), Magnesium, Phosphorous, Potassium, Iron, Zinc, Copper, and Manganese.

Don't know how I came up with this but I thought it's funny
Makes 6 bars
1 cup soft roughly chopped soft sticky dates
1/2 cup chopped (not finely) raw cashews
Pinch of cinnamon


Mix with a spatula or your hands, use rolling pin & plastic wrap for shaping the bars as it gets sticky
As you can see I didn't do a very good job wrapping the bars.
The ideal is to avoid letting to much air between wrap & bar!
Refrigerate & have one when needed.

I made these for the kids and wrapped them as well to go for school...
