Festive Baking

At this time of the year it is really unimaginable not to devour heaps of sugar.... but then picture a fest without sweet...they both go hand in hand.
I am not much of a sweet person but will bear no shame in admitting that I love to gobble a couple of fruit mince cakes, puddings, cookies, fruit tarts, mud cakes....specially during this time of the year whilst planning my well deserved vacation, as the end of the year is approaching so quickly and Christmas being just around the corner. Festivites is in the air- roads are shining with colourful bulbs and baubles dancing everywhere. Every one is busy from endless shopping to waiting for a hopeful New Year......
Feasting has started in every household in some way or other. People are busy decorating their house and preparing goodies for family and friends. My factory currently smells with fresh gingerbread and almond cookies and dark chocolate mud cupcakes....with so many orders to fulfil, I hope it pleases all my important client.
Although my forte is Indian cooking but something keeps dragging me towards baking and chocolates. Remember during my early years how often I would try my hand at baking and come out with disasters...seriously not joking. As time passed by I realised nothing was wrong with the recipe or with the method how I made it.....I lacked patience, which ruined my baking. Life teaches you to be perfect in what you do and I learnt mine. Today I follow two important principal while I cook-
Understand your ingredient- its taste and flavour.
Have loads of patience ? all good things in life come slowly.






Currently I am on the gorgeous vanilla bean phase- attentively baking all these beauties either for my food events or for my orders....and now I smell like one. Come Christmas and more of cookies, cupcakes, chocolates and endless baking from early morning to late nights. All this hard work is gratifying when the consumer relishes every bit of it.....it puts a smile on my face and a beautiful memory in my heart. After all it makes me strive harder to perfect myself as a cook and a baker.
