Filipino Biko Recipe or Rice Cake with Caramel Toppings
Biko is a rice cake with caramel topping or latik. Biko is usually served during birthday parties, fiestas, Christmas, New Year and other celebrated events in Philippines. So, when i craved for biko, i make it on my own unlike in the Philippines, you can buy it in stores. Preparing this recipe takes time especially the making of the latik or the caramel topping. 1/2 kilo malagkit, glutnious rice 1/4 kilo purple rice 1 tbsp. lemon extract 2 tbsp. grated ginger 1 tbsp. salt 4 cups coconut milk 2 cups brown sugar 1 cup water Preparations: Wash the rice. Add salt, grated ginger and add water like your cooking rice. When the rice is done and almost dry, lower the heat. To make latik or topping: Combine all topping ingredients in a heavy saucepan and cook over low heat stirring constantly until thick (about 15 minutes). Pour topping over rice mixture in dish. Increase oven heat to 350 degrees. Bake until top is brown (about 15 minutes). Serve with hot choco or coffee! related searches : Filipino
