Fresh Crab & Corn Chowder
Don?t Be Crabby!
Summer is not over yet so know need to get crabby! Today I have what has to be one of my favorite dishes EVER! It is loaded with sweet succulent crab and fresh sweet corn (from my daddy's farm) topped with basil and just loaded with vibrant colors. This dish just screams FRESH! Now, bear with me, it has been raining cats and dogs here in Houston this month and Wait-Do you know why they use the term cats and dogs? Me either- but either way it has been raining A LOT and even though it is not the tiniest bit cold I was still in the mood for some soup. So question: What type of soup doesn?t scream COLD WEATHER? Answer: Crab and Corn Chowder! I was in the mood for something warm, hearty but still summery. What better than a Corn and Crab Chowder! Yep, a chowder in the heat of the summer! Sounds crazy but with the removal of much of the heavy cream and flour, your left with a simple not so filling soup that just warms your soul! A soup has to have a type of bread to go with it right? Okay, again with the family traditions- it is how we have always had soup, with biscuits, corn muffins, French bread, you name it but we have to have something bready to go along with our soup. So with that said, I have beautiful and delicious fresh corn from my Dad?s very own farm so I decided to make corn muffins with a kick- green chili kick that is. Can you tell I am on a green chilies kick lately? Sorry! Smells like home cooking, taste like home cooking and makes this little girl miss being at home with her parents. Hope you will make this soon on a rainy day but if not keep the recipe handy and pull it out when the weather starts to turn cold and you need something to warm you up!
