Home made ginger chicken rice
Im always very reluctant to cook dinner if its for myself, especially after work. Im too hungry to wait for another 1-2hours for dinner, then wash up etc. But if I have guests around, that is different story, Id cook every night! So I have been cooking pretty much everynight for the past 3 nights since my friend is around visiting I made chicken rice today, its my very own creation, invented few years ago when I was still in Bath. So glad, after all these years, it still turned out alright! I bought chicken thighs and drumstick, because they were 2 for £3, very cheap. I cut them into pieces, arranged them on aluminium foil on a baking tray, marinated it with salt, sugar, pepper, sesame oil, and lotsa chopped ginger and butter chunks on the chicken surface. Then I covered it with a layer of aluminium foil before putting it into the oven. Let it bake for about 30 minutes, then I removed top foil, and leave it in the oven for another 5-10minutes, for the chicken to turn slightly golden brown. For the rice, I used hainanese chicken rice paste, the next time I will try to make the paste myself, using shallots, ginger, lemon grass, salt, and oil.. hopefully can get similar flavour.
