Last week of eats
WOW! The comments I received from all of you on my ramble about slow food, and taking time with our lives were incredible. I did not expect such awesome responses. So thank you for that! A lot of you either completely agreed with me or thanked me for the reminder to take a breath! Which is what I need RIGHT. NOW. Hehe.. just kidding. But really… I’m leaving tomorrow!! First and foremost, I finally grew a pair and bought myself a nice camera! A lot of you know I’ve been coveting the Canon Rebel for months now.. but I finally decided on a Canon Power Shot S90, mainly because it will be more accessible than the Rebel (like if I want to snap a picture of my chef instructor or dinner plate!). I LOVE it so far. It has a lot of the same capabilities as a DSLR so I’m very pleased with it. Still have to majorly read the manual though. Below is my last week of eats at home! Enjoy. Currently: Friday lunch: 2 boiled eggs, raw veggies+salsa, avocado+frozen banana+xantham+guar+ice+water+stevia in the bullet, topped with coconut granola! Last breakfast in Tucson: My final batch of cocoa-coconut-protein pancakes a la Heab. Topped with dark chocolate shavings and coconut butter. :’( Tears of joy. My last bowl of protein ice cream. Topped with a crumbled dark chocolate fudge baby! Have you guys entered Katie’s vita mix giveaway yet??? Because you should. All you have to do is make one her amazing vegan recipes! I would suggest a chocolate-covered one, naturally. This will probably be my last fudge baby for a while too, seeing as NO MAGIC BULLETS allowed in the dorm! Do you remember when I told you I was planning on sneaking one in? Well that was before I knew specifically what wasn’t and what was allowed. Yeah, they’re not. BOO. Dark chocolate fudge babies rock my socks. When I make mine I basically combine the hot cocoa version with the macaroon version. SO GOOD. Especially on top a bowl of protein ice cream. A big green salad for lunch Thursday. With chicken and drizzled tahini. Breakfast Thursday: my last egg white with toast breakfast. Dinner Wedneday: chicken breast with coconut butter, massaged kale salad, and raw carrots. My last Americano at my favorite hang out/free wifi/best pizza/best deli/best cookie/best coffee SPOT: Time Market! It’s located down by the university fyi. (If you’re ever in the Tucson area. haha.) $1.60 for seriously, the best Americano in Tucson, AZ. Also the best pizza! I don’t eat pizza a lot, but hot damn! This is my favorite. Brick oven/wood fired thin crust, veggie pizza. Lunch Wednesday. Breakfast Wednesday: a fried egg in a heart hole. With leftover ~1/2 cup greek yogurt with coconut granola (sadly, I was out of chia.) This artist’s breakfast was inspired by Maggie. Dinner Tuesday: with my mama at a local Greek restaurant, Fronimoe’s. Greek salad with Athenian chicken. Leftover tortilla soup for lunch on Tuesday. Notice the “blogging station” and the brother eating breakfast, while I’m eating lunch. Typical. Are those New Moon pictures in the background I’m spotting? I made Madeline’s boyfriend’s recipe for Chicken Tortilla Soup for dinner on Monday! It was delicious. ————————– Pictures below are from the old camera————————————– A random chicken salad thrown together with cucumber slices, salsa and brussel chips! (Last Friday lunch) Look at that crispyness! Kabocha egg white pancake breakfast Monday. With tahini+maple. Enough said. Dinner (last Friday)= poached eggs with a whole lot of roasted vegetables. Kabocha+protein powder puree. Sunday breakfast. Custard oats in a jar. (Last friday breakfast.) OATIES! From Heab. Best cookies ever. Basically, I’ve decided: the best granola bar I’ve ever had in my life in cookie form. My family devoured this can of cookies in no time at all. The biggest bowl of protein ice cream I’ve ever had. (Sunday?) Last night at home will be spent with dinner with my girlfriends and packing the last of my stuff. Packing is such a pain, right?! Gah. We’re flying out to NY too, so its not like I can pack two cars worth of stuff. As of right now, I think I’m bringing three large suitcases (but they have to be less than 50 lbs blah), hang up bag, carry on, and a purse. Craziness. I don’t start school till Tuesday, so I’ll keep you guys up to date with what’s going on. Like if I live through the cold. YIKES! Seeee you later Tucson!
