Chinese vegetable fried rice

Oil - 2 tbsp
Carrot (cut into thin pieces)- 1 medium
Capsicum (cut into thin pieces)- 1 medium
Cabbage (cut into thin pieces) - 1 medium
Ginger (cut into small pieces) - 1 inch
Garlic (cut into small pieces) - 2 to 3 cloves
Spring onion - 4 to 5 stalks
Salt to taste
Pepper powder - 1/2 tsp
Soy sauce - 1 tbsp
Cooked rice (preferably basmathi rice) - 1 to 2 cups

Step 1: Heat oil in a deep non stick pan. Add ginger and garlic. Saute for sometime. Add carrot, cabbage, capsicum and spring onion. Saute for sometime.

Step 2: Add salt, pepper powder and soy sauce. Saute for sometime. Now add the cooked rice and mix well. Saute it for sometime.

Step 3: All these should be done in high heat. Serve it hot.
