Microwave Chocolate Sponge Cake done in a Mug
Photography by Michael Long Several weeks ago, Watching Iron Chef, I saw one of the chefs on there do a microwave cake in a cup... So thinking to myself, Ok, You don't like microwaves, But you have one because your wife said you well get one...[INJECT SHORT STORY] So being the man that I am, I put my hands on my hips and looked her square in the eyes.... Took a deep breath and said ... "Ok, and what kind do you think we should get dear..." But getting back to the story, This Iron Chef did a sponge cake in a microwave, in just minutes... so thinking like I do, " I said I can do that...!!!" And it came out pretty good, alittle dry, but what the heck it came out of a microwave... and it's chocolate. After a few minutes of digging around the internet, I found a bunch of recipes for microwave cakes... So here is the one that I came up with... I combined several recipes and this one is the one that I tested this evening and my two tasters Ok'd it... This is a cake that will impress the Grandkids alot... or the smaller ones anyway... What you'll need: I used an old coffee cups just in case we had a problem. But we didn't... Actually it was a coffee mug. Ingredients 4 tablespoons of AP Flour4 tablespoons of granulated sugar, just plain old sugar 2 tablespoons of unsweetened baking cocoa, 1 egg 3 tablespoons of milk, I happened to have 2% and nothing exploded 3 tablespoons of veg. oil 1 teaspoon of vanilla extract. Directions Put your dry ingredients in the mug. Stir the daylights out of it mixing. I used a fork, The mug doesn't give you alot of room to work in. So that's the reason for the fork mixer. After you get the dry mixed, Add the egg, and again mix like you mean it. Then add your milk, oil, vanilla. Again mix like you mean it... Take you cup, wipe the edge of the rim and any spill over off the cup. Set that mug with the mix in it. In the microwave... (Note: With all that stuff in there, your thinking this is going to be a mess all over the microwave, and it ain't going to work, the cup is not big enough to hold all this when this starts to rise........) Well put the mug in the microwave and set it for 3 minutes on full power. and shut the door, and hit start.. and just watch the cake rise up right out of the cup as pretty as you please... When your three minutes are up, the buzzer sounds off, you open the door and there stands a cake made in a mug... and no mess on the bottom or sides or top of the microwave...... HA, it works!!!! you can just reach in there grab the handle and pull that puppy out. Do a tooth pick test just to be on the safe side. Which I did, But don't be tempted to add more time. Otherwise your cake will be a little on the tough side.... And best of all I didn't get any sticking on the sides. I did run a knife around the edges but I didn't feel any real sticking... I just plopped that puppy out on a plate, took a fork and took a big chunk out of the top, that's why the photo looks like it does, It's missing part of the top. I ate it... But this does work, and the cake is actually not bad. But it does need some whipped cream, or cream cheese, or icing or maybe some chocolate sauce drizzled over it... so check this out, it could be fun at a party, or for the kids or students at school or you need a chocolate cake fix in the middle of the nite........
