Mullu Muruku (Chakli)

My mom's recipe as follows....



Ingredients :

Rice flour -- 1 cup
Hing -- 1/ 4tsp
Salt -- Acc to taste
Sesame seeds -- 1 tbsp
Urad dal -- 1 heaped tbsp
Water -- enough to make a tight dough
Oil -- to deep fry

Method :

Toast the urad dal in a pan for few minutes till u feel the aroma and started changing colour. Transfer to an another palte and cool it. Grind the urad dal in a coffee grinder and keep aside.Toast the sesame seeds for a minute and keep aside. For those who grind the urad dal in mixie, better seive the powder. Bos it has to be a fine powder. Mix the rice flour in a bowl, and all the ingredients except water. Now pour the water little by little and make a tight dough.



 Now start heating the oil. take the murukku mould and locate ur single starred disc. Now add the dough inside the mould and place the other half of the mould on top of it . Press hard so that  the dough comes out. If it's coming out, u r good to go then. Now make several layers or single layer of coils.


For those who are starters just  like me, may use a ziploc cover greased with ghee to place the murukku.By the time , oil will be hot and u may drop the murukku coils  slowly . Take extra measure while doing this step. Always be attentive to change the level of heat then and there.





 If its getting too hot, u may want to reduce the heat. Turn the murukku to the other side and fry it's nice golden brown. This nice golden brown texture ensures CRISPINESS..., Take the murukku out when it's done and place it on a kitchen towel to drain the excess oil.

Repeat the same process for the remaining dough and  Njjoy !!!!!!
