Good Afternoon!

It has been another wonderful weekend day with lots of good eats! I slept in this morning and woke up refreshed and rested. Sleep really is a wonder drug. I then enjoyed a whole hour by myself before the rest of the crew woke up. I drank my coffee and finished New Moon, by Stephanie Myers. My foray into to vampires and werewolves is wearing thin and decided to pick up the Julie & Julia novel by Julie Powell. I really enjoyed the movie and generally I find the books to be better than the movie so it will be a nice change of pace for me.

I mixed it up a bit this morning and made an Egg White, Salmon, Asparagus Omelette that was positively scrumptious. I really, really want to add more eggs into my diet but for some reason can't eat them first thing in the a.m. very often. I also wanted to use some of the leftovers in the house, I really do hate to waste and do too much of it already. I had leftover veggie kabobs and well as salmon and asparagus and whipped together a very simple and delicious omelette.




Egg White, Salmon, Asparagus Omelette

Diced, squash, zucchini, asparagus, red onion (previously grilled)
2 oz. of grilled salmon
1/4 cup of Liquid Egg Whites
1 tsp extra virgin olive oil

Heat olive oil in non-stick pan over medium heat, add veggies and saute for 1-2 minutes, add egg whites and cook for another 1-2 minutes. Add salmon and flip omelette, cook for another minute then remove from heat and enjoy.



I contemplated adding cheese but it really did not need it. The grilled veggies had a lot of flavor and the salmon is very rich. Filling indeed. I had a ripe nectarine on the side.

Steven had work to catch up on, so the kids and I went swimming. I needed to work off my Carmelized Banana and Nutella Crepes and was able to squeeze in an hours worth of laps. I generally do 6 cycles of 8 laps of freestyle, 4 laps of breast strokes, 2 laps of freestyle kicking with kickboard and 2 laps of breast style kicking with kickboard. I love swimming, there is something so zen about it and it really relaxes me. It is also great on the ol' joints and really need it after I have a done a bunch of running.

I then took the kids to the cinematic masterpiece, G-Force. It actually was a cute kids movie and they loved it! I guess it has turned out to be a movie weekend for us. They were good sports for going to Julie & Julia with us and they actually ended up liking it a great deal. I figured I could take them to their movie as well.

A stop of Yogurt Planet was made after the movie but had no camera with me. I also brought a Yoplait Plus + Fresh Cherries to the pool with me so those are the only other things that I have eaten but not documented today.



For dinner, I loved the bruschetta so much yesterday, that I decided to make a similar sandwich today. I made an awesome Red, Yellow and Orange Caprese Sandwich with Pesto Sauce on a Ciabatta Roll. This was outstanding and I had been looking forward to eating this all day. It was definitely worth the wait. I seem to be into sandwiches lately. There is nothing like good bread, fresh mozzarella, vine ripened tomatoes and pesto sauce. So good!

Red, Yellow and Orange Caprese Sandwich

1 ciabatta roll
1 tablespoon pesto sauce
1 oz of fresh mozzarella cheese
a slice of red, orange and yellow vine ripened tomatoes
fresh basil



So I am going to try and be done with my eating for the day but if I have to have something, I will have a little chunk of one these Sweetriot unBars. I have been wanting to check these out for a while. As it states on the package it is "A yummy concoction of 70% Dark Chocolate with Crunch Cacao 'Peaces' and Plump Raisins" and only 45 calories per mega 'peace'. I don't think one 45 calorie chunk is going to tip the scales and Dark Chocolate is a SuperFood and loaded with antioxidants. That convinced me... how about you?



I hope you all have a great rest of your weekend and I off to make the kids crepes for dinner. They think crepes are the best!
