Cut a square sheet of parchment paper. Peel the carrots and cut thin slices using a vegetable peeler. Place these slices in the center of the parchment paper.
Clean the leek and slice it finely. Place half of the sliced leek on top of the carrots.
Place a salmon fillet on the vegetables. Season with salt, pepper, and sprinkle with thyme.
Fold the sheet in half, with the salmon in the center, and gradually seal your papillote by folding it into triangles along the edges (as shown in the video under the recipe). Ensure it is well sealed or staple it. The papillote should be airtight.
Bake for 20 minutes at 350°F (180°C).
