Peach Mango Honey
I am so proud of myself today, I have always wanted to learn to make preserves and jellies, and today I did it for the first time.I went to the grocery store and while walking down the juice aisle I found a Organic Peach Mango Juice that interested me. I figured it would be a great combination for the honey I was going to make.I bought canning jars pectin and a large canner.I got the idea from an online website called http://www.pickyourown.orgthat told me everything I needed to know about the recipe and the canning.Of course I modified the recipe, instead of peach juice, I used Peach Mango juice in a bottle, which was a yummy twist.You should check it out,it's a great help. Let's get started. You will need: 1 large canner 6 8 oz canning jars with lids and rings Tongs(for dipping jars in and out of the water bath) 1 Funnel( for pouring liquid into jars) 1 package Sure Jell Pectin 4 cups of Apple&Eve Organic Peach Mango Juice 4 cups sugar 1.Wash jars and lids with hot soapy water, and rinse. Fill canner half fullof water. I placed a large dishtowel in the bottom of canner to prevent jars from touching the bottom. Place jars in bottom of canner and bring to a boil to sterilize, about 10 minutes. I left mine in the pot for a bit longer, as it being my first time and wanting to make sure they were sterile.Leave the jars hot until ready to fill. Sterilize lids and rings also. 2.In medium sause pan bring juice to a boil and stir constantly. Add sugar and stir. Add pectin and keep stiring. I had to cook mine quite a while I found out before it started to thicken.It takes some time but it is well worth the wait. Cook until desired thickness. Meanwhile prepare jars for canning. Take jars out of boiling water bath with a pair of canning tongs, being very careful, as the water and jars are very hot. Fill jars with prepared honey with a funnel to prevent spills. Seal tightly closed with ring and lid. Let cool overnight being careful not to disturb jars, for a proper seal. When jars are completely cool check to make sure they are sealed. By placing your finger on the top of the jar, if it makes a popping noise and springs up and down it is not sealed and needs refrigeration.
