Preyiaski (Potato Rolls)
1 cup plain flour2 finely sliced onions2 finely sliced green chilies1 liter oil½ kg potatoesA pinch of paprika or red chili powder½ bunch finely chopped fresh coriander1 tsp yeast1 tsp finely chopped garlic1 tsp sugar1 tbsp oil½ tsp white cuminLuke warm water as requiredSalt to taste
Method Knead the dough and keep in a dry place for half an hour. Boil ½ kg potatoes; peel off their skin and mash. Add 2 finely sliced onions, 1 tsp finely chopped garlic, ½ bunch finely chopped fresh coriander, ½ tsp cumin seeds and salt n black pepper to taste to mashed potatoes.Now make medium-sized balls of the dough and put a portion of potato mixture in the centre and roll it again. Repeat the procedure with all dough. In a wok, heat 1 liter oil on medium flame and fry the potato balls until golden brown. Your Preyiaski is ready. Sprinkle paprika or red chili powder and salt and serve.
