Quick Mix Chocolate Muffins
Chocolate velvety muffins. But be careful, if you over cook them they taste plain and dry. Mine are slightly overcooked. Still managed to taste good but the perfect ones end up with a pointed top with a crack on top. A bit like a volcano. Not rounded like mine. So yes, it is a quick mix recipe but a slightly temperamental one! Cook until a skewer comes out mostly clean and muffins are only slightly springy. This is recipe is straight from Taste.com.au. Ingredients: 200mls milk 125g butter 100g dark chocolate 35g cocoa powder, sifted 3 eggs at room temperature 300g self raising flour 160g brown sugar Method Preheat fan forced oven to 160cLine standard muffin pan with papers or greasePlace milk, butter, cocoa and chocolate in a saucepan. Stir over heat until smooth.Cool 5 minutesAdd eggs and mix with a forkSift flour into a mixing bowl and stir in sugar. Add the cooled chocolate mixture and fold with a large metal spoon until just combined. Important not to overmix.Spoon into muffin pans and bake for 18 minutes.
