Simple and quick apricot cake

At dessert time, indulge in a moist and fruity recipe: the upside-down apricot cake! A star of sunny days, apricot will add a melting and slightly tangy touch to your meal's end. Preheat your oven on grill mode to 350°F. Sprinkle the bottom of your greased mold with brown sugar. Place it under the grill for 5 minutes until it forms a caramel. Remove from the oven.
Clean the apricots and cut them in half. Remove the pits and place them cut side up on the caramel in the mold.
Mix the eggs with the sugar and vanilla sugar.
Add flour, baking powder, salt, and almond meal, and mix well. Finally, add the melted butter.
Pour the batter over the apricots. Smooth the top well.
Bake for 30 minutes at 350°F (180°C).
Let cool completely before unmolding. There you have it, your apricot cake is ready!
Observations
Caramelized bottom: it's not essential but adds a gourmet touch to the cake.
No almond meal? Replace it with flour.
