Rustic, Down-Home Dessert Recipe
What? You don’t ride your bike with rhubarb in the water bottle holder? Last night, when I went to pick up this rhubarb from my parent’s house, my Mom had made a fresh Rhubarb Tart that I just had to have a piece of. Check this recipe out: Rhubarb Tart Ingredients: 2 beaten eggs 1 cup sugar 1/4 cup flour 3 cups chopped rhubarb 1 frozen pie shell 2 beaten eggs 1 cup sugar 1/4 cup flour 3 cups chopped rhubarb 1 frozen pie shell Directions: Whisk first three ingredients together until well blended. Add rhubarb and mix until combined. Pour into the pie shell and bake at 350 degrees for 60 minutes or until set. SO simple, yet SO delish! This was like something your Grandma would make for you. A very down-home, rustic kind of dessert. The best! I keep this bike bag (that I made in 7th grade sewing class, whoop!) attached below my handle bars for holding my cell phone, money and other important items during bike rides. You can never be too prepared! The rhubarb wouldn’t fit – hence the water bottle holder storage. This morning, after my Mom walk (new readers, my Mom and I walk every morning @ 5:30!) I headed to my yoga room to detox…with Detox Yoga #1 from Yogadownload.com! It was full of challenging twists and balance poses – I had to work! It felt really good as my spine twisted, lengthened and popped! I’m still try to work on all the fresh fruit that made its way into my house this weekend, so for breakfast I made some Pineapple Banana Morning Oats. Made the same way as overnight oats, except the morning of instead of the night before. While not as thick and chewy, it was still awesome! In the mix: 1 Blueberry Fat-Free Yogurt 1/4 cup old fashioned oats 1 banana Pineapple Cascadian Farm Oats & Honey Granola This granola (also free from MyBlogSpark) is extreemly calorie dense – 230 cals for 2/3 cup – so I only used a little. I actually like it though! There’s crispy rice cereal in the mix that gives this would-be ordinary granola, some extra crunch! The combo of banana and pineapple made this breakfast seem like one I’d be enjoying on a tropical island somewhere… ah, a girl can dream. I packed a mish mash of items for lunch today. Up first, a big Chef Salad. In the mix: Mixed greens Carrots Broccoli Deli turkey Cheddar Cheese I don’t like putting shedded cheese in things, because they shreds are so small I can’t usually taste them. Cutting up thick slices though, totally works. I also packed some Cascadian Farm Fruitful O’s. (MyBlogSpark hooked a sista up!) I think these are supposed to be the “healthy” version of Fruit Loops/Fruity Cheerios. The nutritional stats are pretty similar to the Fruity Cheerios, from what I can remember. At any rate, I thought they’d be a nice, crunchy, flavorful snack this afternoon! Oh, and I can’t forget my old standby – a Pink Lady Apple! I think I need a Starbucks today. The last time I went, they completely screwed up my order. Foam, when I asked for no foam. Plain, when I asked for sugar-free vanilla. I need my craving for a short, no-foam, skinny vanilla latte fixed stat! Happy hump day! ~~~~~ Do you eat granola? Have you ever made your own? What are some of your favorite cereals? Remember Cracklin’ Oat Bran?? I used to eat that like…crack…when I was little, but I think it came out that it’s full of saturated fat or something and not good for your heart.
