Method
Heat 2tsp of ghee in a sauce pan and roast the rava/sooji nicely till get nice aroma n light golden color and keep aside.Heat 2 tbsp of ghee/butter in a non stick vessel and roast the cashew nuts and raisins separately and keep aside. In the same vessel add another tbsp of ghee and add the chopped fruits (pineapple and peach) and fry till it turns little tender and lightly cooked.
Then add 3 cups of water, pinch of salt and food color ...stir well and cover it and allow to boil. When it starts boiling, turn the heat to low and add the roasted rava little by little and stir continuously without any lumps.Keep stirring till rava gets cooked and add sugar, stir well .Once the sugar gets dissolved completely and raw smell leaves add cardamom powder and mix well. And add remaining ghee/butter and stir continuously till the kesari starts leaving the sides.Lastly add the roasted cashewnuts and raisins mix well and tur off the stove.Close it with a lid and leave it undisturbed for 1-2 minutes.Thats it....delicious pineapple peach kesari bath is ready.
