Scandinavian Coffee Bread
I first saw the original recipe for this delicious bread in what I'd say is probably my favorite cook book, the great Scandinavian baking book by Beatrice Ojakangas. Although I have purchased other books from this author this is by far my favorite. Its the most used baking book in my repertoire. I reference this book for ideas and baking recipes all the time, holidays especially. This bread in particular was the first bread I believe I ever made. I'm not sure why I dared to start my bread making journey with a knot (because I obviously struggle with making them pretty!) In addition to starting my on-going love affair with all things yeasted it also opened my eyes to what I'd now consider my favorite spice, cardamom! As a kid I've eaten a lot of European pastries, having a German and Pennsylvania Dutch background for a few years now doughnut day (Faschnaut Day, a faschnaut doughnut is usually a potato based doughnut, the point of doughnut day was originally intended to help get rid of excess lard before lent) has actually been a holiday we've picked up on in my house. I mean really why not celebrate doughnuts? Well the moral of the story is that a lot of European pastries contain cardamom and its a familiar taste from childhood that I would have never placed had I not purchased this book. I specifically remember fondly a doughnut shop in or around Kittery that sold these amazing blueberry doughnuts, and their plain doughnuts I'm convinced contained cardamom and lots of butter. So I made this bread for the first time a few years back and proceeded to eat the entire loaf, gladly. I altered the original recipe so that I could utilize my sourdough and I had great success. Not only did I slightly alter that aroma and flavor but it allowed me to make a larger batch. (allowing there to be enough for more than just myself this time) I made some cute little knotty shaped rolls as well as one large braided loaf. Its a slightly sweet and rich bread scented with the glorious lemony flavor of cardamom. I'm still working on technique but regardless of how it looked this was so incredibly delicious. Its such a perfect snack, a cup of coffee or tea and a good book this is such a treat thats just meant to be savored. related searches : Scandinavian
