Shaved Fennel and Asparagus Salad

Shaving vegetables yield an elegant presentation. I really love the first "shave" of fennel, the strong aroma of licorice wakes me up. I opted for a shaved theme salad - fennel, onion, asparagus, and Parmesan. I used a mandolin for the fennel and onions and a vegetable peeler for the asparagus and Parmesan. No waste in Bonnibella's house, I used the fennel flowers in my vinaigrette.
