Pomelo and cashew salad with a lemon/lime dressing

1 head green leaf lettuce

1 head red leaf lettuce

1/2 red onion

1 english cucumber

1/2 pomelo

3/4 cup cashews

dash sea salt

dash fresh ground pepper

2 tablespoons lemon juice

2 tablespoons lime juice

1/4 cup brown sugar

1/4 cup olive oil


  • Clean the lettuce in a salad spinner. Rip into bite size pieces.
  • Slice the onion. Chop the pomelo and cucumber. Mix all the veggies and cashews in a large bowl.
  • Combine the dressing ingredients in a jar and shake. Add dressing and salt and pepper just prior to being served.
