Shaved celery and apple salad with honey-lemon vinaigrette

Ingredients

• 2 small stalks of celery, with leaves
• 1/2 apple, cut into 1/2 inch pieces
• Zest of 1 small lemon, plus juice
• 1 teaspoon balsamic vinegar
• 1/2 tablespoon extra virgin olive oil
• 1 teaspoon honey
• 1/8 teaspoon salt

Preparation

• Using a Titan peeler, slice celery into small strips.
• Chop apples into 1/2 inch cubes and place on top of celery strips in a small bowl.
• In a separate bowl, whisk together olive oil, vinegar, lemon zest, lemon juice, honey and salt.
• Pour over celery-apple salad and mix together. Top with minced celery leaves and freshly shaven parmesan cheese.
