I've seen soyrizo in just about every grocery stores produce section and have always mistaken it for nasty feeling vegetarian sausages or something. I had never even heard of chorizo, the pork version, until I did a web search to find out what soyrizo actually was. The brand I bought, is not sausage at all, it's just spanish seasoned, soy protein mush!? Anyways, thanks to the vegan blog; 'just the food', I tried out the authors Cinco de Mayo Burgers. They were great and I want to credit them here!
http://justthefood.blogspot.com/2008/05/cinco-de-mayo-burgers.html In my opinon they did need a few changes. I cut down the flour quite a bit, it seemed to mute the flavor too much and I dont feel comfortable eating flour heavy burger within a flour bun. I also added a tablespoon oil, parsley(I hate cilantro), and cut down the green onions, since so much went to waste trying to mix them into the patties. After the changes they held together very well. Next time i'm going to add some diced green chiles! If you want you can totally toss the bun! These are great topped with hot sauce, red onions and avocados!
Here's the way I made them:
Soyrizo Burgers
(4 burgers)
Ingredients
1 package of Soyrizo
1 can black beans, drained
1/2 cup all purpose flour
1 tablespoon oil
2 green onions, chopped
1/4 cup chopped fresh parsley(or cilantro)
Directions
In a skillet, heat Soyrizo and beans until hot. Remove from heat and stir in flour.
Allow to cool enough for handling. Using your hands, mix in the green onion and parsley, until the mixture is well distributed. Form into patties. You can pan fry these in a bit of oil, but I highly suggest basting a little oil on them and placing them directly onto a grill!
