Toor Dal (Arhar Dal) - 1/2 cup Chana Dal - 1/2 cup Dhuli urad dal (split black gram skinless) - 1/2 cup Dry red chilli - 4 Curry leaves - 10 to 14 Ginger (chopped) - 1/2 inch piece Onion (large, finely chopped) - 1 Green chilli (finely chopped) - 4 Asafoetida - 1/4 tsp Coriander leaves (chopped) - 2 tbsp Salt to taste Oil for frying
Wash and soak all the dals for 1 hour. After 1 hour drain the water completely.
Grind the dals coarsely along with ginger, curry leaves, dry red chilli and salt. If needed add little water.
Put this mixture into a bowl. Now add onion, green chilli, asafoetida and coriander leaves. Mix well.
Heat oil in a kadai. Take small portion of the mixture, make a ball and flatten it with your hands in the shape of vadas.
Put this in the medium hot oil and cook till both sides are golden brown colour. Transfer it into a tissue paper to remove the excess oil.
Serve it hot with any sauce or chutney of your choice.
