Sweet Potato Biscuits
Raise your hand if you are a sweet potato lover! I know many of you food bloggers out there love sweet potatoes, so I should see lots of raised hands. I found this easy recipe in the Vegetarian/Vegan section of About.com. These light and fluffy sweet potato biscuits taste amazing, and they are vegan. The biscuits can be whipped up in a matter of minutes. I used canned sweet potato puree, but you can use fresh cooked sweet potatoes as well. I couldn’t wait for these biscuits to finish baking as the aroma filled the house. I need to go pick up some maple butter. It would be a perfect topping for these pillows of sweet potato goodness.
Sweet Potato Biscuits Ingredients: 1 cup sweet potatoes, pre-cooked and mashed Directions: Pre-heat oven to 375 degrees. Stir together all the ingredients until well mixed. Form the dough into 6-7 biscuits and place on a cookie sheet or baking pan. Bake for 15 – 20 minutes, or until done.
