The perfect finger food

Hello!  Happy Superbowl Sunday!  My arms are like glue today.  I had a fantastic workout yesterday where I was actually able to increase the weight of the dumbbells I used in every single set!  A glorious improvement…sore now, buff later!


Weekends are reserved for yummy breakfasts for the pilot and me because we run around crazy on weekday mornings or else we’re working out.  This morning I decided to make some healthy breakfast burritos. 


I used 1/2 cup egg white beaters, 1 whole egg to add some yolk nutrients, turkey sausage links, 1 green bell pepper cut into thin strips, 1 onion cut into thin strips, dried minced garlic, sea salt, black pepper, and whole wheat tortilla wraps.  Scramble egg whites, egg, sea salt, pepper, and garlic together, while in a separate skillet steam the veggies, and in a 3rd skillet cook the turkey sausage.  (If it’s easier for you to cook one thing at a time, by all means, do so.  I just don’t like to wait a long time for breakfast.  I’m usually pretty hungry when I wake up.  And I know the pilot is pretty ravenous.)  Slice the links in half lengthwise after they’re cooked.  Place a tortilla wrap on a plate with a damp paper towel over it and microwave for about 10 seconds on high to give it that hot-off-the-tortilla-press feel.  Then neatly wrap all the delicious goodies in the tortilla and enjoy!


I had some pomegranate fizz to drink.  1/2 and 1/2 of organic 100% pomegranate juice and sparkling water.




 Tonight was pretty exciting!…not for me really, I follow sports about as much as my dogs do.  But I do, of course, go to the parties and eat the food!  :)   This year is no different, except for one thing.  This year, the (very smart) hostess had everyone bring some kind of side dish.  No problem!  I wanted to bring something healthy but something still so delicious that no one would know.  So after searching through some old Clean Eating Magazines, I found the perfect recipe!  Mini Crab Cakes!

I had the pilot try one before serving them to our friends.  His verdict: Well, I told him he can try one…but one quickly turned into about 6…if that tells you anything!  ;)
