Separate the egg whites from the yolks. Whisk the whites, gradually adding the sugar.
Whisk the whites until stiff peaks form, resembling a bird's beak.
Add the yolks and quickly whisk until fully combined. Don't whisk for too long.
Sift the flour over the mixture, then gently fold it in with a spatula. Mix carefully, lifting the batter over the flour.
Pipe the lady fingers onto a baking tray using a piping bag.
Sprinkle icing sugar over the biscuits. Wait 2 minutes, then sprinkle with icing sugar again.
Bake for 11 minutes at 375°F (190°C).
And there you have it, your lady fingers are ready!
Observations
Shape: You can choose how to shape them! For a Charlotte, you might want to make round biscuits to place at the bottom.
Sift the flour: This step is essential in this recipe. Otherwise, there will be too many lumps!
No piping bag? Cut the corner of a freezer bag and pour your mixture in! If you want even more precision, you can insert a nozzle inside ;-)
