Holiday scrapbook: lemon cut-out cookies


Ingredients

- 1/2 cup butter
- 1 1/2 cup sugar
- 1 egg
- 2 3/4 cup flour
- 1 tsp baking powder
- 1/2 tsp soda
- 1/4 tsp salt
- 1/2 cup fresh lemon juice
- Colored sugars or icing

Preparation

Step 1

In a large mixing bowl, cream together butter and sugar; beat in egg. Stir together dry ingredients; add alternately with lemon juice to creamed mixture.

Step 2

Mix well. Chill overnight. Preheat oven to 400 degrees. On well-floured surface, roll out 1/3 of dough into 1/8" thickness. Cut out shapes with floured cutters.

Step 3

Sprinkle with colored sugars, if desired. Place 1" apart on greased baking sheets. Bake 6-8 minutes or until edges are lightly-browned. Cool, ice and decorate.
