*Peanut Butter Breakfast Cookies (vegan)
These jumbo cookies are a treat I make now and again, I have a repertoire of vegan baked goods that I whip up from time to time. Although we are not vegan or even vegetarian I've always found the vegetarian diet appealing. Although I don't necessarily agree with most vegan fanatics, ultimately I do believe that eliminating some animal products from our diet couldn't hurt. The best part is that they're packed with oatmeal and peanut butter, its a great protein boost disguised by the awesomely delicious chocolate and peanut butter combo. I find them reminiscent of muffin tops but still the chewy soft texture of a cookie. They're a wonderful breakfast to grab and go, or equally amazing with a cup of milk at the end of a long day . Peanut Butter Breakfast Cookies: 2 cups flour 2 cups old fashioned oats 2 teaspoons baking powder 1 teaspoon salt 3/4 cup flavorless oil (vegetable, canola etc.) 3/4 cup extra chunky peanut butter 1 cup sugar 1 cup brown sugar 1/2 cup soy milk or almond milk 2 teaspoons vanilla 1 teaspoon cinnamon 2 cups chocolate chips Pre-heat oven to 350 degrees. Combine all ingredients in a bowl. Stir to combine. Using a disher scoop or about 1/4 cup place cookies 2 inches apart on a parchment lined or lightly greased baking sheet. You may have to ball the cookies up slightly with your hands to combine them. Bake 15-18 minutes or until golden brown. Allow to cool slightly before moving them. related searches : Peanut
