Travel to Spain for Christmas with these Mantecados! These little cinnamon-flavored cookies are thick and delicious :-) An easy recipe to make at home with the kids. Perfect to round off your Christmas meal with a steaming cup of tea. We'll let you follow the steps for making these, step by step, in written, photo, and video format :-)

Ingredients

130 g powdered sugar
150 g lard (at room temperature)
280 g flour
40 g ground almonds
1 tsp cinnamon
zest of one lemon
1 Tbsp sesame seeds

Toast the flour in a pan over medium heat. When it changes color slightly, set it aside and let it cool.
Do the same with the ground almonds (take care, as they will toast more quickly). Set them aside and let them cool.
Once cool, sift the flour into a bowl. Add the cooled, toasted ground almonds, cinnamon, and lemon zest. Mix and set aside.
In a stand mixer fitted with a flat beater, sift the powdered sugar, add the lard (at room temperature), and mix.
When the mixture becomes creamy, add the flour and ground almond mixture and mix until you have a smooth dough.
Flour the work surface, shape the dough into a ball, then roll it out to a thickness of 2 cm (0.8 inches). Use a round cookie cutter to cut out the Mantecados.
Place your shapes on parchment paper and add sesame seeds on top.
Bake in a conventional oven at 190°C (370°F) for 20 to 25 minutes. Remove from the oven and let cool.
